History and cool comfort combine at Brisbane’s most charming (and stylish!) boutique guesthouses, as Natalie Bannister discovers with a city staycation in New Farm.

The charming inner-city suburb of New Farm in Brisbane is known for its vibrant atmosphere, designer boutiques, homewares shops, fashionable bars and restaurants, and gorgeous homes that combine classic Queenslander style with contemporary panache (we’ve showcased many of them in these very pages over the years!).

It’s one of my favourite precincts in my hometown, so when I heard about a grand old dame that had been converted into stylish boutique accommodation here by a design-savvy mother/daughter duo, it was all the inspiration I needed to start planning a staycation.

Tucked away on the quiet residential end of trendy James Street is the delightful Miss Midgley’s, an urban retreat housed in a heritage building that dates back over 160 years, where retro charm combines with modern design to create a unique and unforgettable luxury experience.

From serving as an orphanage to being the residence of a former Queensland premier, the building has a colourful past. In 1905, it became the site of Miss Midgley’s Educational Establishment, a private school founded by the talented artist and teacher, Annie Midgley: the inspiration behind the guesthouse’s name.

Transforming Miss Midgley’s into a luxury accommodation destination has been the passion project of Lisa and Isabella White, who both hold Masters of Architecture degrees from the University of Queensland. Their commitment to preserving the building’s history while infusing it with contemporary elements is evident throughout the property.

The heritage conversion of Miss Midgley’s has been carefully and lovingly executed by Lisa and Izzie, demolishing false ceilings and floors, and revealing hidden architectural details that had been concealed for years. The preserved decorative plaster ceilings, original Petrie brickwork, and mismatched floorboards showcase the building’s rich heritage. At the same time, contemporary touches including Brazilian granite benchtops, brass-topped kitchen tables, pink Italian porcelain tiles, bold salmon-hued walls, and velvet upholstered curved lounges add a dose of modern luxury.

Miss Midgley’s features five fully equipped, air-conditioned apartments, each named after a different area of the former educational establishment. The Refectory, Principal’s Office, Locker Room, Drawing Room and — our gorgeous home-away-from-home for the night — Assembly Hall.

From the spacious rear deck of the Principal’s Office to the rediscovered kitchen in the Locker Room, each apartment has its own unique elements that set it apart. The bedrooms, designed to provide a tranquil retreat, feature minimalist white interiors and functional joinery, creating a sense of zen amidst the vibrant surroundings.

Each apartment at Miss Midgley’s has access to a small deck or balcony, allowing guests to soak in the ambience of the neighbourhood. For those looking to cool off, a pool surrounded by lush tropical gardens awaits, complete with a small sun deck adorned with vintage-style fringed umbrellas, creating a serene oasis to enjoy.

To further enhance the experience, each room is equipped with a copy of a book commissioned by Lisa and Izzie and written by local architectural historian Marianne Taylor, which provides a fascinating glimpse into the building’s historical importance to the area. Throughout the rooms, you’ll also find immersive artworks and quirky lines of prose on the walls to entice guests on a journey through time, offering further insight into the stories and significance of Miss Midgley’s past.

The property can be booked in its entirety for group stays, and we learn that weddings have also become a thing here — the property is perfect for small and intimate celebrations of love! Or do as we did and reserve an individual apartment for a short stay, and settle in to relax and make yourself at home. The ground level’s pet-friendly policy even allows guests to bring their furry friends along for the adventure.

The attentive and responsive team managing the stay adds an extra layer of hospitality, making every guest feel welcome and well-cared for. There’s even a Miss Midgley’s Spotify playlist, with a mix of classic, vintage and soulful tunes so you can really tap into the vibe of the place (I loved it so much, it’s now made its way onto my own playlist!).

Whether you’re an architecture and interior design lover like me, a history buff, or simply seeking a unique and comfortable place for a staycation or short break, Miss Midgley’s offers the perfect excuse for an inner-city sojourn.

The Prince Akatoki London, formerly known as The Arch hotel, has undergone a complete transformation under the expert guidance of Prince Hotels, a renowned Japanese brand making its European debut. Inspired by Japan and its inherently understated and uncluttered aesthetic, the boutique hotel boasts 82 rooms and suites, all beautifully designed with a softly spoken and minimalist feel. Natural finishes, a soft colour palette, and subtle mood lighting create a sanctuary for the senses, and a retreat in the heart of busy London (the hotel is set on a row of classic Georgian townhouses a few streets back from Marble Arch tube station, and only a few minutes walk from bustling Oxford Street).

We checked into one of the hotel’s luxe Studio Suites, hidden away on the lower level. Whisper-quiet in both ambience and style, the Studio Suites are individually designed with bespoke furnishings and a separate seating area made for relaxation and rejuvenation, and it’s a welcome haven of calm after the many days of hectic travel we experienced prior. I waste no time in hitting refresh for body and mind, washing the day away in the expansive walk-in rainfall shower before slipping on the traditional Yukata robe waiting in the wardrobe (complete with instructions on how to properly tie it) and brewing a pot of green tea with our in-house Japanese tea set.

Every visual and sensory touchpoint at The Prince Akatoki London is imbued with mindfulness and the peerless hospitality, design and traditions that are synonymous with Japanese culture. Guests can delve into authentic and signature Japanese experiences, including immersive sushi masterclasses, calligraphy, origami and Furoshiki workshops, traditional Japanese tea ceremonies enhanced by live performances by renowned musician Keiko Kitamura, and exclusive Whisky Flights at The Malt Lounge & Bar — a Japanese-inspired hideaway on the hotel’s ground floor that puts a twist on your traditional London bar experience.

The Malt Lounge & Bar focuses the attention on premium Japanese and international whiskies and showcases a variety of rare and unique Japanese homegrown sake. There’s also an experiential menu of signature cocktails designed like a journey through Japan, with each drink utilising combinations of flavours, textures and presentation that represent the unique character and traditions of the country’s many prefectures, all shaken and artfully poured by the in-house expert mixologists.

Our tipple of choice? The Shimane for my partner (bourbon whiskey, VSOP cognac, rice and barley orgeat and Hojicha Bitters poured on toasted rice), and Tokyo (gin, Shubo Shibori Sake, vermouth and Japanese Bitters Umami) for me, all perfectly paired with wasabi peas and nori rice crackers.

The taste of Japan doesn’t end there, as we head to the hotel’s fine fusion restaurant TOKii, where shoji screens and dark woods create an intimate atmosphere. While the Japanese influence is unmistakable, TOKii’s chefs are inspired by international ingredients and the endless possibilities of fusion cuisine, which is served on elegant hand-crafted tableware, an elevated presentation, like art on a plate.

TOKii’s sushi counter menu has been carefully curated by a master from Japan, with the emphasis placed on delivering the true essence of sushi creation. We also order some dishes from the à la carte menu, designed to be shared at the centre of the table: Japanese pickled vegetables, beef fillet tataki with red onion salsa, ponzu and garlic crisps, Kinoko mushroom salad with green peppercorn dressing, mixed vegetable tempura with a yuzu ponzu, and Robata grilled aubergine with chilli, spring onion and ginger miso. We could easily imagine we were dining in a fine establishment in Tokyo or Kyoto.

For the full Japanese experience, it’s all washed down with the finest Japanese sake, made by Akashi-Tai Japanese sake in the Hyogo Prefecture and served either chilled or warm in a fine traditional Japanese serving set comprising a tokkuri (flask) and ochoko (cups). 

What sets The Prince Akatoki London apart is its ability to seamlessly blend the best of Japanese hospitality with a distinctly London twist. I must admit, I never considered myself to be someone who would enjoy a cruise. However, after recently returning from a remarkable trip around Europe with one of the world’s top luxury cruise companies, I can confidently say that I am now a convert to the cruise experience!

Unlike the massive ships that previously deterred me from cruising, Azamara Cruises offers a more intimate and boutique atmosphere. Embarking on my first voyage aboard their ship, the Azamara Quest, I was not only pleasantly surprised but also amazed as my (already high!) expectations were exceeded.

During an unforgettable 11-night luxury cruise from Turkey to Greece, we had the opportunity to indulge in extraordinary travel experiences that went far beyond just collecting passport stamps. We visited historic destinations and sought out idyllic spots along the Turkish coastline, as well as iconic Greek islands like Mykonos and Santorini. Whether exploring charming seaside villages or discovering secluded areas inaccessible to larger vessels, we were constantly surrounded by the beauty of the Aegean Sea. We immersed ourselves in the rich local history, marvelled at breathtaking landscapes, relaxed on sun-kissed beaches, and savoured mouthwatering cuisine.

It’s all about bespoke luxury and destination immersion with Azamara, and it all started for us in incredible Istanbul …

Istanbul: A Melting Pot of History & Culture

As the official capital of Turkey, Istanbul, also known as the Republic of Türkiye, is a vibrant and diverse city that captivates us from the very beginning. Positioned at the crossroads of Europe and Asia, its architecture, cuisine, and inhabitants are a testament to Istanbul’s rich and intriguing past. From its humble origins as a small town along the Bosphorus, it has evolved into a magnificent capital city during the Byzantine and Ottoman Empires.

Istanbul has an enthralling narrative to share, and though we only have a day to explore before our cruise departs, there is much to discover. Fortunately, our ship, the Azamara Quest, is docked at Galataport Istanbul, right in the heart of the city. This convenient location allows us to easily access the main tourist attractions for a few hours of exploration, including iconic landmarks such as the Hagia Sophia and the Blue Mosque, also known as the Sultan Ahmed Mosque, as well as the Grand Bazaar, one of the world’s largest and oldest covered markets, where you can shop everything from exquisite jewellery and intricate carpets to colourful spices and traditional ceramics.

We make time for a stop at Topkapı Palace, the former residence of Ottoman sultans for over 400 years, and head underground to the incredible Basilica Cistern, an architectural marvel hidden beneath Istanbul’s historical peninsula, which served as a water reservoir for the Great Palace and offers a fascinating glimpse into the genius of the Byzantine Empire.

Exploring the Historical Sites of Türkiye with Azamara Cruises

Azamara Cruises takes great pride in its approach of focusing on destinations, offering passengers unique shore excursions that delve into the captivating history of each port. The Turkish coastline is brimming with countless historical sites waiting to be explored, providing a remarkable journey through time and a glimpse into the ancient civilisations that once thrived in this remarkable region.

Our first stop is Canakkale, a vibrant port city in southwestern Turkey. Here, passengers can visit the archaeological site of the ancient city of Troy. Canakkale is also nestled near the Gallipoli Peninsula, which serves as a poignant memorial to the lives lost during World War I. Passengers of Azamara Cruises can take a guided tour to explore this sacred ground, which is a deeply moving and powerful experience.

Located on the country’s western coast, Ephesus is an ancient city with roots in various empires — a must-visit destination on our Azamara Cruises itinerary. This UNESCO World Heritage Site offers a captivating glimpse into the rich cultural traditions of the Hellenistic, Roman Imperial, and early Christian periods.

During our Azamara shore excursion, we joined Tura Turizm, guided by Ozan, an expert in Ephesus history. Ozan shared stories and insights, immersing us in the echoes of ancient civilisations.

One of the most awe-inspiring sights was the open-air amphitheatre, accommodating 25,000 people. Imagining the grand performances and vibrant atmosphere that once filled this magnificent structure was captivating. Equally impressive was the Library of Celsus, housing over 12,000 scrolls and standing as one of the Roman Empire’s remarkable architectural achievements.

But our time in Ephesus doesn’t end there. Ephesus also sets the stage for Azamara’s AzAmazing Evenings, which are tailor-made celebrations showcasing the local culture and heritage of each destination. These events are included in our cruise package and exemplify Azamara’s commitment to providing unique and immersive cultural experiences.

After freshening up on board, passengers gather for a brief coach journey from the ship’s dock in Kusadasi back to the ruins of Ephesus. The backdrop is magical as the sun sets. We take our seats in the Odeon Theatre, surrounded by ancient columns, as music fills the air under a starlit sky and an orchestra performs captivating pieces by Bach and Mozart. It’s mind-blowingly beautiful and an experience to cherish forever.

Çesme: Where History Meets Seaside Charm

Located on the Aegean Coast of Turkey, within the Çesme Peninsula, is the captivating town of Çesme. This seaside paradise is rich in history and serves as a delightful stop during our cruise. As we meander through the town’s cobblestone streets, we pass by the magnificent 14th-century Genoese fortress. Some passengers explore the renowned beach clubs while we head to the charming village of Alaçati, just a short drive away.

Alaçati exudes a distinct allure with its vibrant Aegean character and well-preserved stone houses. The Greek heritage permeates the air, and as we stroll along the bougainvillea-framed cobblestone streets, we are transported to a serene Greek island. The stone houses of Alaçati epitomise charm, many of which have been transformed into boutique hotels and unique shops, further enhancing the town’s appeal. Quaint bars and picturesque restaurants beckon us to indulge in the cool shade, enticing us to embrace the relaxed ambience fully.

Patmos, Greece: Beaches & Biblical Beauty

We awaken on our first morning in Greece as the Azamara Quest gracefully sails into port on the enchanting island of Patmos, renowned as the Island of the Apocalypse. Our first stop is Skala, the main port and largest town on the island, which charms us with its delightful square surrounded by enticing shops and delicious restaurants.

Venturing beyond Skala, we find Chora, a picturesque settlement about four kilometres away. Accessible by taxis or buses from the port, Chora offers a journey through time with its white mansions, fortified structures, and medieval architecture. Perched on a hill, Chora is crowned by the Monastery of Saint John the Theologian, a sacred sanctuary that attracts Christians worldwide, which has an austere elegance and offers the perfect perch to take in panoramic views of the surrounding landscape.

Back in Skala, strolling along the long promenade, we settle in for a meal at a waterside taverna with views of fishing boats and luxury yachts in the small port. We feast on sizzling saganaki cheese, dolmades, white beans in a tomato stew, and Horiatiki, the traditional Greek salad of tomato, cucumber, fetta and olives — all washed down with chilled ouzo and bottles of Mythos beer —before taking a refreshing dip in the crystal-clear waters of the nearby Skala Beach. It’s soon time to return to Azamara Quest to get ourselves ready because tonight is dedicated to Azamara’s White Night Party, where guests are encouraged to dress in their finest white attire and dance the night away beneath the twinkling stars.

While Azamara’s focus is on elegance and refinement, the White Night Party is a standout event for a late night of entertainment. At sunset over Patmos, the pool deck becomes a dinner party at sea, with Veuve Clicquot champagne flowing and cocktails to accompany a sensational buffet.

After dinner, guests hit the dance floor, where a live band plays and beckons us to let loose and enjoy an evening of partying and indulgent fun.

Kavala and Thessaloniki: Portside Destinations in Greece

Continuing our journey aboard Azamara Quest, we reach mainland Greece and discover Kavala, a historic port city near the ancient city of Philippi. Known for its magnificent Kavala Castle, this vibrant city offers a blend of history, culture, and a welcoming atmosphere. We enjoy a delicious Greek feast at a charming tavern tucked away in an alley, fully embracing the laid-back ambience and immersing ourselves in the local way of life.

Another captivating destination on our itinerary is Thessaloniki, Greece’s second-largest city. Known for its vibrant street markets, Byzantine architecture, and lively nightlife, Thessaloniki combines old-world charm with modernity. We spend a day exploring the bustling streets and shopping at stylish boutiques and malls, enjoying the contrast of the city’s eclectic energy.

A Feast of Flavours: Food and Drink Aboard Azamara Quest

While exploring Turkey and Greece, we can enjoy the culinary traditions of both countries aboard the Azamara Quest. The dining options on this cruise ship offer a variety of flavourful dishes and exquisite presentations that will please even the most discerning gourmands.

Windows Cafe offers a buffet with themed nights featuring global cuisines. Each day, there is a special “Dish of the Day” highlighting the local cuisine of the port we are visiting. The breakfast buffet provides stunning views of the Aegean Sea, making it a perfect start to the day.

Aqualina offers Italian flavours, while Prime C serves steaks and seafood. Discoveries Bar and Restaurant provides a warm atmosphere for romantic meals with fine wines and unforgettable dishes.

On board the ship, you’ll find a variety of bars to choose from. Our evenings start with pre-dinner drinks in The Den, a sophisticated piano bar. The Den offers the Atlas Bar Experience, featuring carefully crafted cocktails made with fresh juices, handmade syrups, and a curated selection of spirits. Each cocktail is served creatively, taking guests on a sensory journey reflecting their voyage.

To fully immerse oneself in the Atlas Bar Experience, do as we did and upgrade to the ultimate beverage package. This includes unlimited access to premium wine and spirits as well as specialty cocktails and is perfect for those wanting to indulge in the finest libations throughout their voyage.

Azamara Cruises: The Pinnacle of Luxury Boutique Cruising

Azamara Quest is a luxury cruise ship with a cosy atmosphere and a capacity of only 702 passengers, making it a unique boutique cruising option. We stayed in a Veranda Stateroom, which had modern decor and a spacious verandah from which we could sit, relax and enjoy the refreshing ocean breeze and stunning views during each docking and departure.

Our stateroom had all the luxurious amenities of an upscale hotel, including a well-stocked mini-bar, plush slippers and robes, and a generously sized wardrobe. Every detail was meticulously taken care of by our own Stateroom Attendant for our comfort and convenience.

The indulgence of luxury extends beyond the confines of our sleeping quarters. Aboard all Azamara Cruises ships, relaxation and wellness are paramount, as exemplified by the Sanctum Spa. This haven offers an array of indulgent treatments such as massages, facials, body wraps, and my personal favourite, the steam room—a daily indulgence that allows me to unwind completely. For those seeking to stay active, the fitness centre boasts state-of-the-art equipment, complemented by daily yoga and pilates classes.

Cruising Santorini and Mykonos: The Ultimate Greek Island Romance

Our Azamara Cruises journey reaches its peak as we arrive at Santorini and Mykonos, the legendary Greek Islands synonymous with this magnificent region.

Renowned as the Jewel of the Aegean, Santorini enchants with its white-washed villages perched on cliffs, breathtaking vistas, and mesmerising sunsets. Azamara Quest docks just off the vibrant town of Fira, nestled on the edge of a 900-foot caldera above the sea. With its charming cobblestone streets and bustling shops beckoning, we board our tender and ride the cable cars that transport visitors up the steep, rugged cliffs for exploration.

While some passengers go on shore excursions or hike to Oia, known for its sunsets and blue-domed churches, we choose to indulge in a leisurely day. We dine at a cliffside restaurant in Fira, enjoying a three-hour lunch of Greek cuisine and local wines overlooking the caldera and white-washed boutique hotels and villas spilling down the cliffside to the sea: simple pleasures and an unforgettable day.

Mykonos, a Greek island known for its iconic Cycladic windmills, narrow winding streets, and breathtaking sea views, is a must-visit destination on Azamara Cruises’ luxury Mediterranean cruise. This cosmopolitan island offers a perfect blend of romance, relaxation, and vibrant nightlife. To ensure a more exclusive experience with fewer crowds, Captain Johannes of the Azamara Quest has adjusted the itinerary for our voyage, ensuring we can arrive early on the penultimate morning of the cruise, beating the arrival of other large cruise ships.

With a full day to explore the wonders of Mykonos, passengers eagerly venture out to discover its delights. However, some, like us, choose to disembark here instead of continuing on to Athens, the historic capital of Greece, where the cruise officially concludes the following day. If, like us, you depart La Sagrada Familia swept up into a Gaudi-inspired love affair (and how could you not?!), don’t miss a visit to another of the master’s architectural gems, Casa Batlló — its surreal design is another enduring testament to Gaudi’s creativity and artistic brilliance, work that has greatly influenced the face of Barcelona.

Other city jaunts that were high on the daily agenda were walks through the Gothic Quarter, or Barri Gòtic, a beautiful old neighbourhood characterised by its stunning cathedral and labyrinthine medieval streets interspersed with peaceful squares. There’s a huge array of restaurants and bars in this area, and we had our most memorable meal on the terrace at El Cercle restaurant in the 15-century Palau dels Comtes Pignatelli, housed in the same building as the Reial Cercle Artístic de Barcelona, which offers a relaxed alfresco dining experience with an artistic ambience.

Eating at a tapas bar is a must-do in Barcelona as well — you’ll find a tapas joint on just about every road and down every alley in the city — and we never tired of the famous pa amb tomàquet (bread with tomato, considered a staple of Catalan cuisine and identity) alongside nationwide favourite patatas bravas (crispy fried potatoes tossed with salsa brava or bravas sauce) and pimientos de Padrón (a popular chilli traditionally served sautéed in olive oil and lightly salted). It’s a great way to connect with the daily lives of the locals as they indulge in the fine art of eating and drinking, Spaniard style.

Each day of sightseeing ended with afternoons back at the rooftop terrace of ME Barcelona, basking in the warm Mediterranean sun while sipping on cocktails, lazing in the pool or on the shaded sun loungers, and soaking in the vibrant energy of the city below. If Barcelona is beautiful, you can consider a stay at ME Barcelona by Meliá to be pure perfection!

Some of the island’s best fine dining options also begged us to indulge. As a guest of Naia, you have the opportunity to explore the other luxury hotels within the Myconian Collection. The Myconian Kyma, a member of Design Hotels, and the Myconian Korali Relais & Châteaux are neighbouring properties, and each has its own signature restaurant available to guests of Naia. We opted for a romantic meal that evening at NOA, the haute Greek restaurant at Kyma, which boasts gorgeous views and equally sensational Mediterranean gastronomy, all dished up for us with one of the most stunning sunsets I’ve ever witnessed.

NOA combines culinary heritage and contemporary innovation, showcasing the finest farm-to-table ingredients, all grown, reared or fished exclusively for the restaurant and meticulously selected by Executive Chef Panagiotis Tsoukatos. We feasted in style on feta in pie crust drizzled with honey and nuts, Black Angus beef fillet tartar with olive oil, egg yolk, capers and chives, delicate zucchini fried and served with the creamiest tzatziki, and the obligatory Horiatiki, the traditional Greek salad we had become obsessed with ordering at every meal on our odyssey through Greece. 

One night on Mykonos was never going to be enough, but the elegance of a stay at an exclusive and one-of-a-kind hotel like Naia was a level of unrestrained luxury that dreams are made of, capturing the incomparable charm, beauty and fashionable style of an iconic Mediterranean island.

A major hazard of working on a magazine like Queensland Homes is that  I’m faced with gorgeous interiors and the best calibre of design every day (arduous, I know!). So during a recent holiday to Phuket, I couldn’t pass up the chance to stay a few nights at one of the most unique resorts in Thailand that combines all the things I love — modern art, innovative design, and a whole lot of luxury.

Welcome to The Slate, an avant-garde beachfront property that was once renowned Phuket resort Indigo Pearl, now reimagined with a new name and new look in an homage to history by the Na-Ranong family, descendants of Khaw Sim Bee Na-Ranong, Phuket’s former governor and a prominent figure in the island’s tin mining industry.

The family lent heavily on this rich history for The Slate’s concept — tin was a central element in the island’s trade for centuries and was once dubbed by locals as their ‘Black Gold’ — enlisting one of Southeast Asia’s leading designers, Bangkok and Bali-based architect, interior designer and landscape designer Bill Bensley, to oversee a thoroughly modern redesign. One where sleek steel, bronze and concrete are artfully combined with raw timbers and traditional Thai decor, all set amongst a lush landscape — a contemporary expression of a tropical aesthetic. Little wonder that The Slate is a member of the Design Hotels collection, a prestigious stable of handpicked boutique and luxurious escapes across the globe that are defined by (you guessed it) great design. 

There’s multiple levels of suites and private villas to choose from, including (my favourite) the sublime one and two bedroom pool villas, perfect for couples, groups or families. Plus, there’s eight restaurants and bars, and three swimming pools scattered across the resort’s grounds, to keep your every whim well catered for. Holiday perfection!

And with a prime position right on the sands of peaceful Nai Yang Beach on the northwest coast of Phuket, a mere five-minute drive by the resort’s chauffeured SUV from Phuket International Airport, it gets bonus points for convenience. You can be out of the airport arrivals hall and into the pool or spa at The Slate in no time.

Nai Yang Beach is one of Phuket’s hidden gems, where colourful umbrellas and sun lounges line the sand and quaint beachside bars beckon every sunset for those wanting the simple pleasures of toes-in-the-sand sundowners. Though when it comes to eating, you’ll be very hard-pressed to pull yourself away from the joys offered at The Slate — the dining experiences are some of the most exciting and innovative I’ve ever enjoyed, including the exquisite Michelin-recommended restaurant, Black Ginger.

The arrival at Black Ginger sets the scene for a magical gastronomic adventure — guests are ferried by raft across a lagoon to the lantern-lit restaurant housed within a traditional Thai mansion, where an evening of tantalising tastes awaits.

The menu crafted by Chef Piak draws from ancient local recipes and is a melting pot of authentic southern Thai cuisine and delicately balanced flavours. We opted for the multi-course set menu and settled in for a masterpiece of Thai culinary art, partaking in no less than nine mind-blowingly delicious dishes.

We were also intrigued by The Slate’s unique take on experiential gastronomic  BOLD events (Be Original Lighthearted Daring) combining food, culture, art, and  fashion, held throughout the year. There’s some very out-of-the-box concepts designed for hungry bellies — and open minds. Case in point: coming up soon after our stay was the cannabis-infused dining experience, Bong Appetit (Thailand having decriminalised marijuana in 2022).

And the experiential journey doesn’t stop at the food. Every element of The Slate is designed to stimulate the senses — it even has its own signature scent, White Champaka, which co-founder and owner Krystal Prakaikaew Na-Ranong personally chose to reflect the tropical essence of Phuket. The fragrance wafts throughout the resort’s spaces, and also greets guests at the spa, where more sensory pleasures await.

In a country renowned for its massage and therapeutic spa traditions, Coqoon Spa represents a different holistic healing experience, with a menu of rejuvenating rituals that will transport you to bliss. The spa is set out over seven private suites, the pinnacle of which is The Nest, which seems to defy gravity, hidden away in the resort’s lush gardens and native trees.

A memoir of Gujarati family recipes, A little bit of this, a little bit of that brings love on a plate to lovers of Indian cuisine, with a batch of time-honoured recipes that showcase authentic Gujarati fare, served up family style.

Winning Best in the World in two categories at the 2018 Gourmand World Cookbook Awards catapulted mother and daughter Jayshri and Laxmi Ganda into the culinary world in New Zealand. Now living in Queensland, Jayshri brings her top selling cookbook A Little Bit of This, A Little Bit of That to an Australian audience.

Jayshri and Laxmi spent eight months cooking and recording everyday Gujarati recipes of fresh, light and clean Indian food to ensure the cooking skills and knowledge that their mums brought from India are passed down through the generations and aren’t diluted or lost along the way.

Apart from seafood, meat and poultry, the cuisine in the Gujarat region is typically vegetarian with an abundance of fresh spices. Here, the mother and daughter duo share some of their favourite dishes from the book to entice you to try them out at home.


STUFFED CHILLIES

MACHA NA RAVEYA

Prep Time 10 minutes

Cook Time 12 minutes

Makes 4 portions

This is a tangy and spicy delight. Large sweet chillies are stuffed with a flour-based mixture that is lavished with spices then fried. These are amazing!

1 small onion, chopped

1/4 cup pea flour *

4 tablespoons oil, divided

1 1/2 tablespoons brown sugar

1 tablespoon peanuts, crushed

1 tablespoon dessicated coconut

1 teaspoon ground coriander

1 teaspoon ground cumin

1 teaspoon salt

1/4 teaspoon turmeric powder

2 tablespoons water

4 (15-20cm) large sweet chillies

* Substitute: semolina

In a small bowl, combine onion, pea flour, two tablespoons of oil, sugar, peanuts, coconut, coriander, cumin, salt and turmeric. Add water and stir into a paste. Wash chillies and slice lengthways on one side, ensuring not to cut right through. Remove any seeds and fill with paste. In a large frypan, heat remaining two tablespoons of oil on a low heat. Add chillies and cover. Cook for 8 minutes, turn over chillies and cook for further 5 minutes or until cooked through. Serve hot or cold on their own or with a main meal.

CUMIN SPICED RICE

JEERA VARDA CHORKA
( jee-rah-var-da-chor-ka)

Prep Time 5 minutes

Cook Time 20 minutes

SERVES 4

A simple way to flavour a plain rice. Subtle yet aromatic flavours make this a must-try option for rice.

3 tablespoons clarified butter

2 teaspoons cumin seeds

2 whole cardamom pods

1/4 cinnamon stick, broken

1 teaspoon salt

2 cups long grain rice

4 cups water

2 tablespoons fresh coriander, chopped

Heat clarified butter in a large frypan on a medium heat. Add cumin seeds for 30 seconds or until darkened. Add cardamom, cinnamon and salt, stir to release flavours. Add rice and stir fry for 1-2 minutes. Transfer to a medium saucepan, add water and bring to boil. Turn to a low heat, cover and cook for 15-20 minutes or until water is reduced and rice is cooked.Toss through coriander and serve hot.

MUNG BEAN CURRY

SERVES 3 – 4

A staple of any Indian diet, mung is a really comforting curry that is delicious with hot roti (rotli) on a cold day.

A nutritious meal for the vegetarian diet. It’s always mung on Monday at our home.

1 cup green mung beans

1 carrot, grated

3 cups water

1 tablespoon oil

1/4 teaspoon cumin seeds

1 pinch of asafoetida

1 teaspoon fresh green chilli, minced

1/2 teaspoon fresh garlic, minced

1/2 teaspoon fresh ginger, minced

1 1/2 teaspoons salt

1/2 teaspoon brown sugar

1/4 teaspoon turmeric powder

1/2 teaspoon ground coriander

1/2 teaspoon ground cumin

2 tablespoons fresh coriander, chopped

Optional: 1/2 cup Greek yoghurt, unsweetened

Wash and drain mung beans. Add mung beans, carrot and water to a saucepan, and bring to a boil. Cover and cook on medium/high heat for 30 minutes or until mung beans are cooked. In a large frypan, heat oil on medium heat, add cumin seeds and fry for 30 seconds or until darkened. Add asafoetida and fry until dissolved. Add chilli, garlic, ginger, salt, brown sugar and turmeric. Stir paste to infuse masala.Add mung beans and stir to combine; allow to heat through. Add yoghurt if desired and stir to combine. Sprinkle and stir through coriander and cumin. Garnish with fresh coriander and serve hot with your choice of bread and / or condiments.

CORN BHAJIYA

Cook Time 10 minutes

Makes 35-40 pieces

A delicious deep-fried corn fritter to have as a snack or starter. Great as a plate to take to a party or picnic.

1 cup creamed corn

1/2 cup coarse semolina

1/2 cup pea flour *

2 tablespoons plain Greek yoghurt

1/4 teaspoon baking powder

4 tablespoons oil, divided

1/4 cup fresh fenugreek, chopped

1 tablespoon fresh green chilli, minced

1/2 teaspoon fresh garlic, minced

1/2 teaspoon fresh ginger, minced

2 teaspoons salt

1 teaspoon sugar

1/4 teaspoon turmeric powder

1 litre oil for deep frying

* Substitute: channa / besan flour

In a medium-sized bowl, combine corn, semolina, pea flour, yoghurt, baking powder and 2 tablespoons of oil. Cover with cling wrap and leave to rest overnight or for up to 6 hours at room temperature. Add fenugreek, chilli, garlic, ginger, salt, sugar, turmeric and 2 tablespoons of hot oil to the mixture. Stir to combine. Heat remaining oil in a wok on a high heat. Carefully place 1/2 tablespoon sized portions into hot oil and deep fry for 1-2 minutes or until golden brown. If Bhajiyas are very oily, the oil temperature will require a higher heat. Drain on paper towels. Best served hot. 

INDIAN DONUT BALLS

GULAB JAMAN / GULAB JAMBU

MAKES 18 – 20

Indian version of homemade donuts dipped in a sugar syrup as opposed to granulated sugar. A tasty favourite and easy to make.

For the dough

1 cup milk powder

1/2 cup white flour

1/2 cup fine semolina

1 teaspoon baking powder

1 teaspoon cardamom seeds, ground

3/4 cup cream

1 litre oil for deep frying

For the syrup

1 cup sugar

1 cup water

1 teaspoon rose essence

For the dough

In a large bowl, combine milk powder, white flour, semolina, baking powder and cardamom. Make a well in the middle and pour in cream. Combine into a dry dough. Measure dough into tablespoon sized portions and roll into balls. Heat oil in a wok on a medium heat and deep fry balls for 4 minutes or until a golden brown colour. Rotate while deep frying.

For the syrup

In a medium saucepan, dissolve sugar, water and rose essence on a high heat for 5 minutes. Add deep-fried balls to syrup and let cool at room temp before refrigerating. Serve chilled. Or heated with icecream. Will keep in refrigerator for 1-2 weeks.
